When the pigs are big enough and there is a need for more pork, it's time for one to become dinner. I missed getting there in time for the initial slaughter, but here is the pic being butchered for its different parts. Notice how fresh water is used to wash the meat. This is done very quickly and I would say it took about 15 minutes for it all to take place.
There is a sense of assembly to it all to ensure our health. Notice sister keeping track of what parts of the pig are where so that they can be cleaned and then put in the refrigerator or freezer immediately.
This man specializes as a butcher and knows his cuts of meat. He cuts according to what sister needs for the residents. Not one part of the pig is wasted, even the ears and nose will become part of what we consume, and all of it is nutritious and darn tasty.
