Today, Sunday, we had a visit from Bishop Joseph's sister, her husband, son, and two daughters. They helped us celebrate the bishop's anniversary of ordination in a special way. We had a fantastic lunch.
BBQ chicken done to perfection. The bishop likes the wings and beer. He fits in perfectly in the States.
Spring rolls, freshly made, with shrimp. Nothing better on a hot, muggy day. We devoured them by the plateful.
The bishop's niece helped prepare the greens for the rolls. She jumped right in.
The sisters are the best cooks, always making meals fresh and delicious.
Pasta. I know! Pasta in Vietnam. The bishop's sister worked all morning on the sauce and it showed. Mmm...a little slice of home.
And here is the table, although without the beer and wine that came when we sat down.
This is the family, with son Huy on the left. He is going to be a junior in high school and will begin this fall at Henry Newman High School in West Palm Beach, FL. He hopes to attend college in the U.S. We all wish him luck.
